Wild Common Tequila Reposado is a testament to the skill and dedication of Master Distiller Salvador Rosales Trejo, affectionately known as “Chava.” This reposado tequila is the result of a meticulous aging process in used American bourbon barrels, a method that imbues the spirit with a distinctive character and depth, building on the exceptional qualities of the Wild Common Tequila Blanco.

The careful selection of ex-bourbon barrels for aging allows the tequila to develop a harmonious blend of flavors and aromas, reflecting Chava’s expertise in achieving the perfect balance between tradition and innovation. This lightly aged tequila captures the essence of cooked agave, complemented by the richness of fresh roasted pecans and the natural sweetness of raw honey.

Production Process:

  • Roasting: Agave piñas are roasted for 72 hours in small 12-16 ton brick ovens, ensuring the natural sugars are perfectly caramelized.
  • Extraction: A traditional stone tahona and roller mill are used to crush the cooked agave, extracting the flavorful juices while retaining the fibrous material, which adds complexity to the fermentation.
  • Fermentation: The fermentation process is carried out naturally, with agave fibers present, allowing for a full and rich flavor profile to develop.
  • Aging: The tequila is aged in ex-bourbon barrels, which impart subtle woody notes and a smoothness to the reposado, enhancing its inherent flavors without overwhelming them.
  • Distillation: The spirit undergoes two rounds of distillation in small stainless steel and copper pot stills, refining its purity and enhancing its crisp, clean profile.
