Process & Profile
Origin:
- Blend of two lots of Fins Bois and Bons Bois cognacs aged for six to eight years.
- Aged in 225-liter ‘red’ casks made of French oak, which were sent to Madeira to soak for two years with Madeira wine from the Madeira appellation.
- The Madeira casks impart sweet and savory, oxidized, and rancio notes.
Aging:
- Initially aged separately in ‘red’ French oak casks (350-400 liters).
- Selected for their exceptional organoleptic characteristics and aging potential.
- The eaux-de-vie were kept from maturing too quickly to allow further development of the Madeira cask features.
- Bottled at 48% ABV, non-chill filtered, with no added sugar or caramel.
