Process & Profile

Origin:

  • Blend of two lots of Fins Bois and Bons Bois cognacs aged for six to eight years.
  • Aged in 225-liter ‘red’ casks made of French oak, which were sent to Madeira to soak for two years with Madeira wine from the Madeira appellation.
  • The Madeira casks impart sweet and savory, oxidized, and rancio notes.

Aging:

  • Initially aged separately in ‘red’ French oak casks (350-400 liters).
  • Selected for their exceptional organoleptic characteristics and aging potential.
  • The eaux-de-vie were kept from maturing too quickly to allow further development of the Madeira cask features.
  • Bottled at 48% ABV, non-chill filtered, with no added sugar or caramel.

Tasting Notes

Nose: Fruity and concentrated aromas of raisin, prune, and sweet wine, complemented by balsamic and delicate oak notes (toffee, coconut, whiskey lactone). A fresh and mineral bouquet.

Palate: A balanced fusion of fruit and oak, featuring dried plums, ripe grapes, and subtle wine and nut characteristics.

Finish: Long, smooth, and evolving, with lingering sweetness and refined complexity.
